Stir fried chicken with chillies and basil

This is a favourite in our house – it’s really quick to make, is super tasty and weighs in at just one syn per serving. Winner!

A Thai delight – Chicken with chillies and basil

Syns on Extra Easy: 1 per serving

Ingredients – for two people

2 x chicken breasts
1 or 2 red chillies (how hot do you like it?!), sliced
2 tbsp fish sauce
2 tbsp dark soy sauce
2 tsp sugar
Large handful of basil leaves, chopped
75 g rice per person

How to make it

1. Heat your frying pan with fry light, when hot, add the chicken (turn heat down a bit) and stir fry for several minutes until browned

2. Turn the heat up and add the chillies, fish sauce, soy sauce and sugar – cook for a further five to 10 minutes (until the chicken is cooked through).

3. Stir in the basil leaves at the last second,  serve immediately with rice and whatever veg you fancy on the side.

4. Serve and devour.
